Lemon Coconut Poppy Seed Cake

Ingredients

cup self raising flour
1/2
cup desiccated coconut
3/4
cup caster sugar
1/4
cup poppy seeds
2
tbs grated lemon rind
125
g butter, melted
2
eggs, lightly beaten
3/4
cup milk
icing sugar
Directions
1.
Combine the self-raising flour, desiccated coconut, caster sugar and poppy seeds in a bowl.
2.
In a separate large bowl add the lemon rind, melted butter, eggs and milk.
3.
Slowly add the dry ingredients to the butter mixture and fold in until fully incorporated.
4.
Pour the mixture into the prepared lined tin and place in a 180°C oven for 50 - 55 minutes, or until cooked.
5.
Once cooked, stand for 5 minutes then dust with icing sugar (optional)
