Chicken, Leek And Potato Pie

Ingredients
50
g butter
1
medium leek
4
rashers bacon, cut into thin strips
1
tbs plain flour

cup chicken stock
1/2
cup cream
3
cup shredded cooked chicken
4
large potatoes, peeled and chopped
3/4
cup buttermilk
Directions
1.
Heat 25g of butter in a large fry pan and add leek and bacon and sauté until leek is soft.
2.
Stir in flour, cook a further minute then gradually stir in the chicken stock and cream.
3.
Stir constantly over heat until mixture boils and thickens.
4.
Remove from heat and stir in chicken.
5.
Pour mixture into a pie dish.
6.
Boil potatoes in a large saucepan until tender and drain.
7.
Return potatoes to the same pan with remaining 25g of butter and the buttermilk and mash until smooth.
8.
Spread mash over the chicken mixture then brush potato topping with some melted butter.
9.
Bake in a 190°C preheated oven for 20 minutes or until the topping is golden.
