Blowaway Sponge

Ingredients
4
eggs, room temperature, separated
3/4
cup caster sugar
1/2
cup custard powder
1/2
cup corn flour
pinch salt
1/2
tsp bicarb soda
cream
strawberry jam
Directions
1.
Beat eggwhites until stiff using a mixer or hand beater.
2.
Add egg yolks, one at a time, beating until thick.
3.
Add sugar slowly, beating continually.
4.
Sift all the dry ingredients together and fold in to the egg mixture.
5.
Prepare two 5 x 20cm cake tins by lining them with baking paper.
6.
Spoon the mixture evenly between the two prepared cake tins and bake in a 175°C oven for 25 minutes.
7.
Remove both of the cakes from the tins and allow to cool on racks.
8.
Sandwich the two cakes together with cream and strawberry jam.
9.
Decorate the cake with icing sugar and strawberry's (optional)
