Chicken Chow Mein

Ingredients
1
purchased barbecued chicken
200
g dried egg noodles

tsp canola oil
200
g cauliflower, cut into florets
4
spring onions
1
red capsicum, thinly sliced
1 1/2
cup chicken stock
2
cup shredded cabbage
100
g green beans, halved
1/4
cup brown sugar
1/4
cup soy sauce
2
tbs vinegar
1
tbs cornflour
Directions
1.
Remove meat from chicken (discard skin and bones and shred) and place in a bowl.
2.
Cooking the noodles following packet directions
3.
Drain noodles once cooked and rinse under cold water.
4.
Heat a wok over high heat and add oil.
5.
When the wok is hot, add cauliflower and stir-fry for 2 minutes.
6.
Add onion and capsicum to wok and cook for 1 minute.
7.
Add 1 1/4 cups of chicken stock into the wok, followed by the cabbage and beans.
8.
Bring to boil and cook for another 2 minutes.
9.
Add noodles and chicken.
10.
Combine remaining 1/4 cup of chicken stock with sugar, soy, vinegar and cornflour in a jug.
11.
Add jug mixture to the chow mein and bring to boil.
12.
Cook for 1 minute or until sauce thickens and serve.
