Chocolate Flavoured Mocha And Berry Trifle

Ingredients
250
g light cream cheese

cup cream

eggs, separated
250
g mascarpone cheese
80
g white chocolate, grated

cup caster sugar

cup strong black coffee
1
tbs soft brown sugar

cup Tia Maria or chocolate-based liqueur
1
tbs rum or brandy

b savoiardi biscuits (sponge finger)
300
g frozen or fresh raspberries

cup dark cocoa powder
whipped cream and extra cocoa powder, to serve
Directions
1.
Place cream cheese in a mixing bowl and beat with an electric beater until smooth.
2.
Add cream and yolks and beat for a further 2 minutes or until slightly thickened.
3.
Using a metal spoon, fold in mascarpone cheese and chocolate.
4.
Stir until well combine and mixture is smooth.
5.
Beat egg whites in a small mixing bowl until stiff peaks form.
6.
Add sugar gradually, beating constantly after each addition, until mixture is thick and glossy and sugar is dissolved.
7.
Fold egg white mixture into cheese mixture, stirring until smooth.
8.
Combine coffee, sugar, liqueur and rum or brandy in a medium bowl.
9.
Quickly dip one third of the sponge figure into coffee mixture.
10.
Arrange biscuits in base of 8 cup capacity serving bowl. Sprinkle with 1 tablespoon cocoa, one third of the raspberry's and one third of cheese mixture.
11.
Repeat layers twice more with dipped biscuits, cocoa, raspberry's and cheese mixture.
12.
Cover and refrigerate for several hours or overnight, to allow the flavours to develop.
13.
To serve, top with freshly whipped cream and sprinkle with cocoa.
