Roasted Brussel Sprounts With Pancetta

Great winter comfort dish

Ingredients
6
ozs Pancetta, diced
5
shallots, minced
4
lbs Brussel sprouts, halved lengthwise
2
tbs chopped fresh thyme
salt and freshly ground pepper, to taste
Directions
1.
In a large roasting pan or ovenproof sauté pan over medium heat, cook the pancetta until crisp, 5 to 8 minutes.
2.
Add the shallots and cook until soft, about 2 minutes.
3.
Increase the heat to medium-high, add the Brussel sprouts, thyme, salt and pepper and stir well.
4.
Transfer the pan to the oven and roast for 15 minutes, then stir the ingredients.
5.
Continue roasting until the Brussel sprouts are tender, about 10 minutes more.
6.
Transfer to a serving dish and serve immediately
