West African Chicken Peanut Soup

Ingredients
2/3
cup diced onion
1 1/2
tsp minced garlic

tbsp dark sesame oil
1 1/2
tsp curry powder
1/2
tsp salt, pepper
1/2
tsp crushed red pepper flakes
3
cups chicken broth
1/4
cup tomato paste
1
cup chopped, stewed tomatoes drained
3
tbsp chunky peanut butter (don’t skimp on the measurement, and a 4th T was added)
Directions
1.
In large pot, sauté chicken, onion and garlic in the sesame oil for about 10 minutes, until onion is tender.
2.
Add curry powder, salt, pepper and red pepper flakes and sauté 1 minute more.
3.
Add rest of the ingredients, stirring until well-combined. Heat until very hot but not boiling.
