Napolitana Sauce

Base for eggplant parmigiana

Ingredients
brown onion - finely chopped
can diced tomatoes
garlic clove - minced
bottle of passata
1
tbs mixed herbs
2
-3 bay leaves
salt & pepper to taste
Directions
1.
Place oil, onion and garlic in large pot to soften.
2.
Add tin of tomatoes, passata, mixed herbs, bay leaves and salt & pepper. Simmer for 1hr.
3.
Taste for seasoning. Add sugar if tasting tart and cook for a further 1/2 hr till it looks rich and oil appears on the surface.
