Bbq Pulled Pork

Works amazing in the slow cooker! In the oven is good too.

Ingredients
bbq rub:

cup paprika
2
cups sugar
1/4
cup cayenne
1/4
cup chili powder
1/4
cup salt
2
tbs ground coriander
2
tbs dried rosemary
2
tbs dried thyme
2
tbs onion powder
2
tbs granulated garlic
6
lbs pork shoulder
oil
apple cider
stock (chicken, veg, or beef)
pineapple juice
garlic, minced
onions, sliced

can tomato paste
Directions
1.
Break down pork, if necessary, to chunks roughly 6x3", do not trim fat! Rub thoroughly in BBQ rub, then put into pan you are cooking in. Add in liquids - use equal parts of both liquids (apple cider vinegar can be substituted for stock if desired). Smear tomato paste over top, cover tightly, and cook at 350 for 3-4 hours, or 250 (low for slow cooker) for 6-8 hours, until pork is falling apart at the touch. Remove from liquid and cool enough to handle. Pull off fat caps and discard; use two forks to pull apart pork, mix with BBQ sauce as desired and serve! Can be cooled and reheated (covered in oven) if desired.
