Fig Salad

From Cooking Light; delicious, fresh and light!

Ingredients
2
cups seedless watermelon, cubed (use red and yellow for extra color)
1/2
cup red onion, thinly sliced vertically
2
large fresh calimyrna or other green-skinned figs, stemmed and halved (can use all one kind as well)
2
large fresh brown turkey, black mission, or striped tiger figs, stemmed and halved
1
oz feta cheese (about 1/4 cup), crumbled
1
tbs olive oil
1
tsp lemon juice
1
tsp honey
1
tbs fresh mint, chopped
1
tbs fresh basil, chopped
2
tbs balsamic glaze (or balsamic reduction - boil balsamic until reduced by half and cool)

tsp coarse sea salt
1/4
tsp freshly ground black pepper
Directions
1.
Arrange watermelon on a serving platter or bowl.
2.
Top evenly with red onion, then figs. Sprinkle with cheese.
3.
Whisk together oil, juice, and honey in a small bowl. Sprinkle over salad, then top with mint and basil. Drizzle balsamic glaze on top, and sprinkle evenly with salt and pepper. Refrigerate or serve immediately!
