Mediterranean Halibut

The most amazing way to ever make halibut! From some awesome Bellingham chef originally, now very much ours.

Ingredients
2
-3 lbs fresh halibut
salt and pepper
angel hair pasta
2
colors of bell pepper (red, yellow, orange, green)
zucchini
red onion
tomatoes
kalamata olives
feta, crumbled
for the dressing:
dijon mustard
red wine vinegar
olive oil
salt
pepper
Directions
1.
Brunois all vegetables (very small dice) and mix together in a medium bowl.
2.
In a small bowl, whisk together the dressing ingredients. Drizzle over vegetable mixture and mix well.
3.
Cut skin off halibut and cut into 6-8 oz filets. Season each filet and sear in a cast iron pan, presentation side first, 3-4 minutes or until fish releases naturally from the pan. Turn over gently, top with vegetable mixture and feta, and bake at 425 for about 5 minutes. Fish should reach an internal temperature of 145 and start to flake.
