Mac And Cheese Bites

Ingredients

ozs small elbow macaroni
2
tbs unsalted butter
2
tbs all-purpose flour
1
cup milk
1/2
cup heavy cream
1
tbs finely chopped thyme, or 1 tsp dried
salt and pepper
3/4
cup grated sharp cheddar cheese
3/4
cup grated parmesan cheese, divided
5
tbs seasoned dried breadcrumbs
vegetable spray for muffin pans
Directions
1.
Bring a pot of lightly salted water to a boil over high heat. Add macaroni and cook 7 minutes or until slightly al dente, drain and set aside.

Meanwhile, in a medium pot melt the butter. When sizzling, add flour and whisk continuously for 4 minutes to make a roux and cook out the flour.
3.
Slowly whisk in the milk and then the cream, season.

Whisk in 3/4 cup cheddar and 1/2 cup of parmesan. Add elbow mac and mix.
5.
Spray mini muffin tin with pan spray or use mini muffin cups. Drop macaroni mixture into each and top with breadcrumbs and remaining parmesan cheese. Bake at 350 for 10 minutes.
