Slow Cooked Kalua Pork

KikuKat put it best: "A simple way of making traditional Hawaiian kalua pig without having to dig a hole in your back yard." Goes well with steamed rice, lomi salmon and poi if you want an epicurean adventure. An epic venture. Source: (hybrid) allrecipes.com; pineappleandcoconut.com

Prep
Cook
Serves 12people
Ingredients
2
tbs kosher salt
2
tsp ground black pepper
1/2
tsp ground ginger
1
lb bone-in pork shoulder roast
1
tbs soy sauce
2
tsp Worcestershire sauce
1
tsp liquid smoke flavoring
1/2
large head cabbage, shredded
banana leaves, cooking twine (optional)
Directions
1.
If using banana leaves, which can be found at any Asian grocery store, place some leaves in the bottom of the pot reaching up the sides. This will give the pork more of a Lau Lau style flavor.
2.
Pierce pork all over with a carving fork.
3.
Mix kosher salt, black pepper, and ground ginger in a bowl.
4.
Rub evenly into surface of pork roast, then place the pork on top of the leaves.
5.
Stir soy sauce, Worcestershire sauce, and liquid smoke together in a bowl; pour over the pork roast.
6.
Wrap tightly with the leaves, being careful not to spill; then making sure to tuck the leaves back around the roast. Tie snugly with cooking twine.
7.
Cook on Low 10 hours. Add cabbage to the pork and sauce in the slow cooker; cook another 30 minutes.
8.
Remove meat from slow cooker and shred, adding drippings as needed to moisten.
