Pancakes

This classic breakfast or brunch item is tasty and filling. I would suggest adding blueberries or chocolate chips to make them more flavorful. I would also suggest adding flaxseed or using whole grain batter to make the pancakes healthier. I also recommend topping the pancakes off with fruit.

Ingredients

cups self rising flour
3
tablespoons sugar
1 1/2
cups milk
2
eggs, beaten
1/3
cup vegetable oil
Directions
1.
Combine flour and sugar. Add milk, eggs and oil; mix until batter is fairly smooth. Somewhat lumpy batter makes light pancakes so don’t over mix. For each pancake pour scant ¼ cup batter onto hot griddle (375 degrees F) Turn pancakes when tops are covered with bubbles and edges look cooked. Turn only once. DO NOT PAT DOWN WITH PANCAKE TURNER.
