Goong Phad Kratiem Prigthai

Stir-fried king prawns in garlic and black pepper sauce.

Ingredients

gr peeled king prawns
30
gr garlic
20
gr black pepper
20
gr coriander root
small red chilli 1-2 depending on how spicy
coriander leaf and stalks

gr spring onion sliced
5-7
tbsp oyster sauce
fish sauce (just to taste - used instead of salt
1-2
tsp sugar
chicken stock
cooking oil
Directions
1.
Smash garlic, coriander roots and chilli together (in pestle and mortar). Add in black pepper.
2.
Heat pan with medium heat and add cooking oil.
3.
Once oil is hot, add first ingredients above to fry until a yellowish colour.
4.
Add prawns and fry until prawns are half cooked.
5.
Add oyster sauce and a little chicken stock and simmer sauce until thickened.
6.
Season with sugar and fish sauce to taste.
7.
Once prawns are cooked, finish with coriander and spring onions.
8.
Serve with rice.
