Quiche

Edith always made this quiche every time Amy or Lisa came home from college. She loved seeing the two of them gathered around the kitchen table with all their hometown friends, eating quiche and catching up on the happenings of the semester. A perfectly simple dish to share with family and friends.

Ingredients

9-inch frozen deep dish pie shells
3
eggs
1 1/2
cups milk
2
tablespoons flour
1
tablespoon melted butter
2
packages chopped frozen spinach
1
pound Swiss cheese grated
Directions
1.
Spread bottom of pie shells with ½ of the cheese. (Reserve ½ of the cheese for top). Spread cooked and very well drained package of spinach over each crust.
2.
Beat eggs, flour, milk and butter together. Pour ½ batter over each pie. Spread remaining cheese over spinach and batter.
3.
Bake at 350 for 30 minutes or until top is brown.
