Tabbouleh

Tabbouleh is known to have originated in the mountains of Lebanon and Syria. Edible herbs called qadb that are used in tabbouleh recipes even today, were eaten by Arabs since Medieval times. It is a part of the Arab food culture today, just as much as baba ganoush, hummus and pita.

Ingredients

cup fine bulgur
3
tablespoons olive oil
1
cup boiling-hot water
2
cup finely chopped fresh flat-leaf parsley (from 3 bunches)
1/2
cup finely chopped fresh mint
2
medium tomatoes, cut into 1/4-inch pieces
3
tablespoons fresh lemon juice
3/4
teaspoon salt
1/4
teaspoon black pepper
Directions
1.
Place the bulgur in a large bowl, pour in the boiling water, and add the lemon juice, olive oil, and 1 1/2 teaspoons salt. Stir, then allow to stand at room temperature for about 1 hour.

In a large bowl, add the parsley, scallions, mint, parsley, and tomatoes.
3.
After the dressing has been sitting for an hour, pour it in with the rest of the ingredients; and then mix well.
4.
Just before serving, serve lettuce to eat with it. Enjoy!
