Vegetable Tofu Stir Fry

Overall the stir fry tasted pretty great, but the tofu should've been marinated, and the dish needed to be cooked longer. Also, there was a clear lack of flavor. I would recommend adding minced garlic and green onions to the recipe to make it have more flavor.

Ingredients

- pound boneless skinless chicken breast, cut into thin strips

- teaspoons chopped garlic

- Tablespoons vegetable oil

- Tablespoons soy sauce
1
- teaspoon sugar
1/8
- teaspoon ginger
1
- package frozen stir fry vegetables
2
- cups cooked rice
Directions
1.
Marinate chicken strips in the oil, garlic, soy sauce, ginger and sugar for at least 30 minutes (in the refrigerator).
2.
Cook and stir chicken with marinade on medium heat for 5 minutes or until chicken is cooked.
3.
Add vegetables and cook until vegetables are heated through.
4.
Add rice and complete cooking.
5.
Adjust soy sauce and seasoning to your liking.
