Shiro

Shiro is an essential part of Ethiopian. It is a favorite dish during special occasions, including Lent, Ramadan and other fasting seasons. It is a vegan food, but there are non-vegan variations including (a spiced, clarified butter) or meat (in which case it is called bozena shiro). It can also be mixed with injera and cooked together to have shiro fitfit.

Ingredients
/2 cup Shiro powder 1 small onion.

cloves garlic.
1/4
cup olive oil.

teaspoon Berbere.

cups water.
Salt as needed.
Directions
1.
Place water in a medium saucepan and bring to a low simmer.

Add nori and simmer for 5-7 minutes.

In the meantime, place 3 Tbsp of miso into a small bowl, add a little hot water and whisk until smooth. Then add to the soup and stir. ...
