Tori And Jamie's Sunday Shakshuka

Ingredients
good glug of olive oil

large onion (brown or white), peeled and mixture of sliced & chopped

clove of garlic
1
red pepper, cored and cut into small strips
2
tsp muscovado sugar
1
bay leaves
3
sprigs thyme, picked and chopped
1
tbsp flat-leaf parsley, chopped
3
ripe tomatoes, roughly chopped
1
tsp cumin
1
tsp coriander (fresh or powder
1
tsp paprika
1
tsp cayenne pepper
1/2
tsp saffron strands
salt and pepper
tomato sauce / paste - added to taste (& consistency
up to 250ml water

Directions
1.
Heat a deep, large pan on medium. Slowly warm olive oil. Add chopped onion, sauté for a few minutes until the onion begins to soften.
2.
Add garlic and continue to sauté until mixture is fragrant.
3.
Add the peppers, sugar, bayleaves, thyme, cumin, parsley and coriander, and cook on high heat to get a nice colour.
4.
Add the tomatoes, saffron, paprika, cayenne, salt and pepper. Cook on low heat for 15 minutes, adding enough water (or tomato paste/sauce) to keep it the consistency of a pasta sauce.
5.
Taste and adjust the seasoning (spice it according to preferences). It should be potent and flavoursome. You can prepare this mix in advance.

Crack the eggs, one at a time, directly over the tomato mixture (into the gaps), and making sure to space them evenly over the sauce. With the back of wooden spoon stir round the yolks (making sure not to crack them!) to mix in the whites.
7.
Sprinkle with salt and pepper, cover and cook very gently for 10-12 minutes, until the egg just sets.
8.
To serve, sprinkle with fresh coriander or parsley, drizzle with some good quality olive oil, crack over some black pepper, and serve with chunky white bread. Can be served at the table in the pan.
