Sausage, Egg, & Cheese Muffins

Ingredients
4
cups shredded hash browns, thawed

tablespoons butter, melted
1
teaspoon salt
1
teaspoon pepper
8
eggs
1 1/2
cups shredded cheese
1/2
pound sausage, cooked and crumbled
Directions
1.
Preheat oven to 400 degrees
2.
In a large bowl, combine the hash browns, butter, salt, and pepper
3.
Spray a muffin tin with cooking spray; fill the cups 3/4 of the way full with the hash browns
4.
Press with fingers to mold the hash browns to the cup all the way to the top
5.
Bake 20-25 minutes, or until they are starting to brown
6.
Reduce oven to 350 degrees
7.
Take half of cheese and sprinkle along bottom of cup
8.
Add half of the sausage crumble
9.
Whisk the eggs together and fill the cups almost full
10.
Top with remaining cheese and sausage
11.
Bake 20-25 minutes, until eggs are set
12.
To freeze: let cool for two hours, then place muffins in ziploc bag. Microwave for a few minutes before serving.
