Balsamic Chicken Lasagna

Living in Cebu, I've learned to get creative when it comes to cooking dinner. Gepher requested lasagna and since we didn't have ground beef, I had to use chicken. This experiment is now a favorite.

Ingredients

uncooked lasagna noodles
1
lb boneless skinless chicken breasts
1
can four cheese spaghetti sauce
2
tbsp balsamic vinegar
2
tbsp brown sugar
2
garlic cloves
1/8
tsp onion powder
2
cups shredded mozzarella cheese
1/2
cup Parmesan cheese
Directions
1.
Cook noodles according to package directions. Meanwhile, season chicken with onion powder, and garlic; Saute chicken in olive oil until juices run clear; let stand for 15 minutes or until cool enough to handle. Shred chicken with two forks. Drain noodles; set aside.

To saucepan you cooked chicken in, add spaghetti sauce, balsamic vinegar, & brown sugar. With a microplane, grade garlic into sauce. Let simmer until all flavors have blended together.

In a 13-in. x 9-in. baking dish coated with cooking spray. Begin layers with sauce on the bottom, noodles, and mozzarella cheese. Repeat layers. Add Parmesan cheese to the top layer. (You should have 3 layers.)
4.
Cover and bake at 375° for 25-30 minutes or until bubbly. Uncover; bake 5 minutes longer. Let stand for 15 minutes before cutting.
