Plant Pots Spinach And Pine Nut Lasagne

Ingredients

pt milk
50
gr butter
50
gr plain flour
60
gr Parmesan
salt and pepper
600
gr spinach
fresh lasagne sheets
50
gr pine bites toasted
knob of butter
200
gr mozzarella / light cheddar
Directions
1.
In a pan put the milk, butter and flour. Whisk over medium heat until thickens (5mins)
2.
Stir in 50g Parmesan till melted then take off heat. Remove and discard spinach stalks.
3.
In a large sauce pan, put a knob of butter add spinach with a pinch of salt. Cook until wilted with lid on.
4.
Drain/ squeeze spinach until dry

Put spinach In a bowl with sauce and pine nuts then layer mixture and lasagne sheets alternately in a large rectangle dish.
6.
Finish with extra cheese on top.
7.
Cook in oven at 180 degrees for 35 - 40mins.
