Val's Pumpkin Soup

Dear Sivanne. I cant believe you are getting married. You were just a little girl last time we saw you. This is our fav pumpkin/ butternut soup recipe Enjoy Lots of love Val, Steve and kids xxx

Ingredients

tbsp butter/marg
1
onion, chopped
2
potatoes chopped
4
large carrots, peeled & sliced
1
kg pumpkin chopped
6
cups chicken or vegetable stock
1
tsp salt
1
tbsp sugar
125
ml cream (optional
Directions
1.
Fry onion in marg in large pot on high heat until golden.
2.
Add potatoes and carrots and saute for a few minutes.
3.
Add pumpkin and stock and allow to simmer with lid on for at least 1-2 hours or until vegetables are soft.
4.
Blend with hand blender until smooth. Add more water if too thick. Add sugar and salt after blending to taste.
5.
If adding cream, only add cream after re-heating on low. - Note if you add cream you cannot freeze.
