Rustic Italian Tortellini Soup

Ingredients

sausage links, casings removed
1
medium onion, chopped
6
garlic cloves, minced

cans (14.5 oz) chicken broth
1 3/4
cups water
1
can (14.5 oz) diced tomatoes, undrained
1
pkg (9oz) refrigerated cheese tortellini
1
pkg fresh baby spinach, chopped
3/4
tsp dried basil
1/4
tsp pepper
pinch of red pepper flakes
shredded parmesan cheese
Directions
1.
Crumble sausage into Dutch oven ( deep stewing pot). Add onion. Cook and stir over medium heat until cooked throughout.
2.
Add garlic; cook 1 minute. Stir in broth, water and tomatoes. Bring to a boil.
3.
Add tortellini, return to boil. Cook for 7-8 minutes or until tender, stirring occasionally. Reduce heat, add spinach, basil, pepper, and pepper flakes. Cook 2 to 3 minutes or until spinach is wilted.
4.
Serve with Parmesan cheese.
