Steamed Mussel & Chorizo In Saffron White Wine Broth

Ingredients
1
bag of mussels
4
Chorizos (Goya recommended)
1/4
cup olive oil (just enough to cover bottom of stew pot)
Saffron (a pinch, preferably ground up)
Half Red Pepper, diced small
Orange Rind (2x 1 inch strip, diced)

Garlic diced or crushed
1
half cup of onion diced small
White Wine (1/2 bottle)
Cilantro
tsp of salt
Directions
1.
Pour the olive oil into a stew pot over medium heat.
2.
Put in diced onion and garlic and cook slowly until translucent (do not brown)
3.
Put in garlic and Mussels, turn up heat to medium high
4.
Sautee for 1 min, stirring so that all mussels are coated with olive oil.
5.
Some mussels may start to open
6.
Turn to High Heat
7.
Pour in wine
8.
Push mussels to the side, and put saffron right into the wine broth
9.
Put in diced peppers, and orange rinds.
10.
Stir and steam mussels for 2-4 mins until all mussels are opened
11.
Sprinkle fresh cilantro over top and serve in pot with Crusty Garlic Bread
