Bacon Potato Soup

This is the copycat recipe for the Bacon Potato Soup served at Red Lobster.

Ingredients

Large Baking Potatoes, cooked and cut in 1-inch cubes

slices Thick Cut Bacon, cooked until crisp and chopped (reserve for topping)

tsp Bacon Drippings

clove Garlic, minced

cup All-Purpose Flour
6
cups Chicken Broth
2
cups Half and Half
1/4
cup Fresh Parsley, chopped
1 1/2
tsp Dried Basil
1
tsp Salt
1
tsp Coursely Ground Pepper
1/2
cup Cheddar Cheese, shredded for garnish
Directions
1.
Prepare the potatoes and bacon (be sure to reserve bacon grease).

Using a large stock pot over medium heat, add bacon drippings, garlic and flour, stirring well and cook for 2 minutes, stirring often.
3.
Slowly add chicken broth to mixture and cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
4.
Stir in potatoes, half-and-half, and next 4 ingredients. Bring to a simmer, and cook, uncovered, 10 minutes (do not boil).
5.
Stir in bacon. Serve hot. Spoon into bowls and garnish with cheddar cheese and bacon.
