Garlic Balsamic Roasted Red And Yellow Cherry Tomatoes

Ingredients
2
containers red grape tomatoes
1
container yellow grape tomatoes*
2-3
tbsp extra virgin olive oil
1
tbsp balsamic vinegar
2-3
tsp rosemary leaves and
3-4
thyme sprigs
salt and pepper to taste
4
cloves garlic smashed
1/4
tsp granulated sugar (optional)
1
baguette or ciabatta or any other favorite bread to slice thinly and toast as crostini
Directions
1.
Preheat oven to 450°F.
2.
Toss tomatoes with oil, vinegar, herbs, salt and pepper and garlic (and sugar, if using) and spread the mixture on a sheet or in a roasting pan, or a glass baking dish.

Roast for 20-30 minute, or until tomatoes have split open, browned a bit on the top and look “melted.” You can gently turn tomatoes once or twice during roasting to re-coat with oil and released juices, but they will turn out beautifully even if you don't!
4.
For Crostini: take slices and brush lightly with good olive oil, then sprinkle with shredded or grated Parmesan-Reggianno cheese.
5.
Bake at 350 for 5-7 minutes or until warmed and lightly golden. Serve with tomatoes.
6.
Optional: Mix some fresh herbs, roasted garlic, Parmesan cheese, honey, dried fruit, pesto, roasted peppers, olives or anything else you fancy with some whole-milk ricotta cheese or a soft-ish goat cheese and use it as a spread on a toasted slice of your favorite bread. Then top it with these delicious tomatoes and enjoy.
