Italian Baked Omelets

Make these ahead for breakfast all week. These also taste great in a low-carb wrap.

Ingredients

cup shredded low-fat mozzarella cheese

large green bell pepper, diced
1/2
cup baby portobello mushrooms, diced
1/2
cup fresh spinach, thinly sliced
3
cups liquid egg whites
1
tbsp Italian seasoning mix
1
tsp onion powder
1
tsp garlic powder
1/4
tsp ground black pepper
Directions
1.
Preheat oven to 350 degrees Fahrenheit.
2.
Spray 12 muffin cups with non-stick cooking spray.
3.
Combine the ingredients into a medium bowl.
4.
Pour equal amounts of mixture into each muffin cup.
5.
Bake in a preheated oven at 350 degrees Fahrenheit for 25-30 minutes, until egg whites are firm.
