Chopped Green Salad

At LearnVest, I'm constantly running all over the place, so I prefer things that are quick and healthy. A big salad is my lunch go-to, and this is one of my favorites.

Ingredients

tbsp fresh lemon or lime juice

olive oil
1
dijon mustard
salt
1
head butter or bibb lettuce
1
package arugula
1
cucumber
1
avocado
2
celery stalks
2
scallions
1/2
cup cheddar or jack cheese, diced or shredded
capers
fresh basil or tarragon, chopped
Directions
1.
For the dressing, whisk together the lemon or lime juice, oil, mustard, salt, and pepper, or simply combine the ingredients in a jar, close the lid, and give it a good shake.
2.
For the salad, chop the lettuce, arugula, cucumber, avocado, celery, and scallions. Combine the chopped vegetables and the cheese, capers, and basil or tarragon, if using, in a bowl. Lightly dress, toss, and serve. Voila!
