Mussels For Lazy People

Every Saturday, I would walk up to the Isham Street Greenmarket, shop, and chat up the sellers. Inevitably, I'd get a simple recipe, along with a story that was far superior to anything online.

Ingredients

mussels
1
cup water
2/3
of a stick of unsalted butter
1
head of garlic, halved crosswise
Directions
1.
Clean the mussels under cold running water, removing any barnacles, glass shards, whatever. Combine the water, butter, and garlic in a large pot and bring to a boil over high heat.

Once the water has boiled for a few minutes, dump the mussels in and cover. Cook for about 5 minutes, checking toward the end of the cooking time to see if the mussels have opened. Some people call this “steaming,” but that’s pretentious. I think of it as getting the mussels to relax. Once opened, transfer the mussels to a bowl and pour the cooking liquid on top.
3.
Don’t share the bowl with anyone; it’s too delicious for that. Make them do it for themselves. It will build character.
