Deli Stuffed Eggwiches

I got this recipe from a Rachel Ray cookbook and I like it quite a bit. Best of all, the ingredients are usually ones I have on hand. Its especially good for rainy days.

Ingredients
2
eggs
splash of milk or cream
salt and pepper
2
tbls honey
2
tbls apricot or raspberry preserves
2
tbls grainy dijon mustard
8
slices white or wheat bread
4
slices ham
4
slices swiss cheese
4
slices turkey
2
tbls butter
Directions
1.
- In a shallow bowl, beat the eggs and milk or cream with salt and pepper to taste. Set aside.
2.
- Mix together the honey, preserves and mustard in a small bowl and spread the mixture on one side of each bread slice.
3.
- With the spread sides facing in, make sandwiches of ham, cheese and turkey, folding meat and cheese as needed to fit bread.
4.
- Melt butter in a skillet over medium heat.
5.
- Dip each sandwich in the egg mixture and place in the skillet. Cook for 3 minutes on each side or until golden and warm through
6.
- Serve hot.
