Cauliflower Fried Rice

Ingredients

large onion; diced
1 1/2
cups of carrots; diced

tbsp coconut oil
1
tsp salt
1 1/2
tsp ground ginger
1
tsp garlic powder
1
large cauliflower; grated
1/2
cup of coconut aminos
2
eggs, scrambled
1/2
cup of green onions; diced
Directions
1.
In a large pan, cook the onion and carrots in the coconut oil and season with salt ginger, and garlic as it's cooking.
2.
Once the carrots and onions are soft (7-9 minutes in pan), add the cauliflower and coconut aminos.
3.
Stir to evenly coat the cauliflower and cook for about 5 minutes.
4.
Push the mixture all the way to the side of the pan and cook the scrambled eggs.
5.
Once scrambled eggs are cooked, stir into the cauliflower.
6.
Add the green onion and stir into the cauliflower.
7.
Take off the heat, then serve.
