Falafel Burger

A favorite of Dr. Hamrick, this healthy vegetarian option is great for your summer grilling! The patties freeze well and microwave easily for quick leftovers.

Ingredients
2
cans drained chickpeas
1
onion, roughly chopped (about 1 cup)

tbsp fresh parsley
2
tbsp fresh cilantro
1
tsp salt
1/2-1
tsp dried hot red pepper
4
clove garlic (or 1/2 tsp garlic powder)
1
tsp cumin
1
tsp baking powder
4-6
tbsp

tbsp olive oil
Directions
1.
Use olive oil to grease frying pan. Turn on stove top to medium heat.
2.
Blend all ingredients in food processor or hand blender. Form patties to fit on bread slices or hamburger buns and place directly into frying pan. Fry until brown; turn to brown the other side.
3.
Assemble on bread soft avocado (in lieu of butter), tomato slices, cheese slices, lettuce, pickle, bell pepper, onion slices, and any other fixings you like!
