Caprese Egg Cups

The perfect bite for breakfast. creamy sunny side up eggs with tomato and basil. To me that says decadent breakfast on a low carb budget!

Ingredients
4
individual ramekins
softened butter
8
eggs
1
pt grape or cherry tomatoes

(6 oz) mozzarella cheese, cubed

basil leaves, chopped
8
tbsp heavy cream (2 tablespoons per dish
salt and pepper
Directions
1.
Heat oven to 350 degrees. Butter each individual ramekin.
2.
Crack two eggs into each ramekin. Season with salt and pepper and add 1 tablespoon of the cream.
3.
Add a few cherry tomatoes Then the other tablespoon of cream. Top with chopped basil.
4.
Bake in the oven for 5-8 minutes. Turn on broiler and then broil until the eggs are set the way you want them.
5.
Remove from oven and serve with fresh coffee. If you would like you serve some sausage with the dish.
