Spicy Chocolate Black Bean Energy Bars

You can thank concierge Kjersti for these vegetarian energy bars that are a great snack before or after a workout. High in protein, fiber, and flavor (and you may have had a sample at the plant and bake sale)!

Ingredients
1
can of black beans
1
cup almond butter
1/2
cup of honey or agave nectar
2
small bananas
2
tbsp coffee beans (I use a spicy Mexican blend from Just Coffee)
2
tsp vanilla extract
dash of salt

cup cocoa powder (I use a chili-cinnamon blend from Whole Foods)
1/2
cup shredded coconut

cups old-fashioned oats
3/2
cups almond flour
Directions
1.
Preheat oven to 350.

In a food processor or blender, add all the ingredients except the oats and flour. Blend until smooth. Then pour in dry ingredients and pulse until just combined.

Lightly coat a 9x13 glass baking dish with cooking spray (I use coconut oil) and spread the blended mixture evenly.
4.
Place in the oven and bake 15-18 minutes or until a toothpick inserted in the center comes out clean. Let cool for several minutes. Cut into 10-12 bars and enjoy!
