Zucchini Lasagna

Brenda (Activities Dept) and her mom Lois love this colorful dish. A great twist to an old favorite!

Ingredients

lb pork sausage or ground beef
1
can (2 cup) tomatoes
2
cans (6 oz) tomato paste
1
tsp salt
1/2
tsp pepper
1
tbsp parsley flakes
2
tbsp oregano flakes
Basil, to taste
1
clove minced garlic
1
large zucchini, sliced lengthwise
2
eggs, beaten
3
cups small curd cottage cheese
1/2
cup grated Parmesan cheese
1
lb mozzarella cheese slices
Directions
1.
Preheat oven to 350.

Brown meat slowly and spoon off excess fat. Add tomatoes, tomato paste, spices, and garlic.
3.
In a small bowl beat eggs and add cottage cheese. Mix in Parmesan.
4.
Slice zucchini lengthwise and microwave 3-5 minutes.
5.
Cover 9x13 pan with zucchini slices followed with 1/2 cottage cheese mixture, then half spread of meat mixture. Repeat layers except top with shredded mozzarella rather than sliced. Bake for 30 minutes.
