Cherry Dark Chocolate Breakfast Bars

These bars were inspired by store-bought highly processed breakfast bars, but I used healthier ingredients instead. This is a great recipe to make on a weekend and have breakfast ready for the week.

cups crisp brown rice cereal, such as Rice Krispies Gluten Free

cups quick-cooking rolled oats

cup chopped dried cherries
1/2
cup dried cranberries
1/2
cup unsalted peanuts or chopped nuts, such as walnuts or pecans
1/2
cup sunflower kernels
1/4
cup dark chocolate chips
1/4
cup ground flaxseed meal
1/4
cup wheat bran
1
cup natural peanut butter
1/4
cup honey

tbsp packed brown sugar
1/4
cup agave nectar
1
tsp vanilla
Directions
1.
Line a 13x9x2-inch baking pan with aluminum foil; set aside.

Combine cereal, oats, dried cherries, dried cranberries, nuts, sunflower kernels, dark chocolate, flaxseed meal, and wheat bran into a large bowl. Set aside.
3.
In a medium microwave-safe bowl combine peanut butter, honey, and brown sugar. Microwave, uncovered, on 100 percent power (High) for 1-1/2 to 2-1/2 minutes, stirring once.
4.
Combine mixture with agave nectar and vanilla; stir.
5.
Pour mixture over cereal mixture. Stir until just combined. Press into prepared pan to form an even layer.
6.
Cover with plastic wrap and refrigerate for 12 to 24 hours.
7.
Cut into 16 bars. Store individual bars using plastic wrap or plastic bags in refrigerator.
