Mediterranean Farro Salad

Ingredients

cup farro
1/2
diced red onion
1 1/2
cups diced cucumber
1/4
cup lemon juice

tbsp olive oil
1/2
cup chopped parsley
1/4
cup chopped mint
1/4
cup chopped dill
Directions
1.
Cook the farro in the 3 cups of water. Bring to a boil and simmer for 30 minutes. Strain any remaining liquid. Allow farrow to cool.
2.
Add remaining ingredients and combine in serving bowl. Serve chilled or at room temperature.
