Mexican Meatloaf
This recipe has it all - lean beef, cheese, refried beans, 2 low-carb wraps, and spices. All you need is a vegetable side dish. For added spiciness, try substituting a can of spicy refried beans.
lower carbohydrate wraps, such as Flat-Outs Multigrain with Flax

cup shredded 2% cheddar cheese or 2% Mexican cheese blend
3/4
cup low-sodium salsa, optional
Directions

Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).

In a medium bowl, mix beef, chili powder, onion powder, cayenne pepper, and black pepper.

Place the beef mixture on a large piece of aluminum foil. Press the mixture into an approximately 1/2-inch thick rectangular shape, staying 1/2 to 1 inch away from the edges of the foil. Spread the refried beans evenly over the top of the flattened beef. Layer the wraps on top of the refried beans. Layer the wraps with cheese and salsa.

Gently roll the layered beef into a Swiss roll shape. Wrap in the foil. Pinch and seal the edges of the foil.

Bake in a preheated oven 40 to 45 minutes, until the meat is no longer pink in the center.
