Dad's Chocolate Mousse

Ingredients

gr of Cadbury dairy milk chocolate
4
eggs, separated carefully
2
cups cream
1/2
cup caster sugar
Directions
1.
To begin, separate yolks from egg whites carefully.
2.
Use microwave to melt the chocolate in a bowl, 15 seconds at a time so as not to burn. You can also leave small amounts of unmelted chocolate in it to create texture in the mousse.
3.
Stir in egg yolks only until smooth and then gradually blend in cream.
4.
Whip egg whites on a higher speed and gradually add the caster sugar. Whip to form a stiff meringue. Note: easier if eggs are room temperature and you very slowly add the sugar.
5.
Gradually fold the meringue into the chocolate mixture, without over mixing.
6.
Pour into individual dishes and chill for at least 6 hours. Chilling overnight is best for thicker setting.
