Pavlova

Best made the same day it will be eaten.

Ingredients

egg whites (eggs should be at room temperature before separating

tbsp sugar

tbsp cornstarch
1
tsp white vinegar
1
tsp vanilla
Directions
1.
Remove eggs from fridge and bring to room temperature for an hour or two before separating. They will whip better at room temperature.
2.
Prepare baking tray. Cover it with foil, lightly greased.
3.
Preheat oven to 300 degrees.

Separate eggs.
5.
Beat egg whites until stiff. Add sugar gradually, beating all the time.
6.
Fold in cornstarch, vinegar, and vanilla. Work quickly so egg whites stay firm.
7.
Spoon mixture onto baking tray in a round shape, making a hollow in the center.
8.
Place in pre-heated oven, bake at 275 degrees for 30 minutes.
9.
Then turn to 250 degrees and bake for a further one hour.
10.
Turn oven off, wait 1 minute.
11.
Slowly open oven door. Pause a minute before removing baking tray.
12.
Turn pavlova upside down onto serving dish, gently remove foil. Pavlova will sink slightly. Allow to cool.
13.
Whip 1/2 pint heavy cream and spoon into hollow. Top with sliced strawberries, or kiwi fruit.
