Roasted Vegetables In The Oven

Nothing tastes better on a chilly night than roasted vegetables! Roasting vegetables in the oven brings out the natural sugar and caramelization giving the vegetables a more intense flavor.

Ingredients

cup red and yellow onion, diced
1
cup red peppers, diced
2
cups broccoli florets
1
cup butternut squash optional
1
cup carrots, diced
olive oil for drizzling
garlic powder to taste
salt and pepper
fresh thyme sprigs if possible
herbs provence
Directions
1.
Line a cookie sheet with foil.
2.
Spread all the veggies out on the pan. Sprinkle generously with the spices and herbs. Drizzle with olive oil and mix all to make sure everything is coated.
3.
Roast them at 450° for 20-25 minutes and they were delicious!
