Creamy Dark Chocolate Mousse

A decadent cheat that will taste like a million bucks or at the least, a french silk pie! This mousse is made low carb by taking out the sugar and adding Spenda. Go ahead and indulge!

Ingredients
1
cup bittersweet chocolate, chopped

tbsp unsalted butter
1
cup whipping cream
1/4
cup brewed espresso, cooled
3
tbsp brandy
3
large egg whites, at room temperature
1/8
tsp salt
3
tbsp granulated sugar
Directions
1.
Melt the chocolate and butter in a metal bowl placed over a pot of simmering water, stirring until melted. Remove from the heat and allow to cool.

Whip the cream to soft peaks and stir in the espresso and brandy. Chill until ready to use.

In a clean bowl, whip the egg whites with the salt until foamy, then gradually add the sugar while continuing to whip the whites until they hold a soft peak when the beaters are lifted.
4.
Fold the whipped cream quickly into the chocolate, then fold in the whites. Pour this into desired serving dishes and chill until set. or chill then pipe into serving dishes. Top with whipped cream and a cherry. Grate a touch of chocolate onto the top and enjoy!
