Mummy's Spinach And Pea Soup

Siv, this is one of our family favorites' i hope Sholom will like it. Don't forget that lemon and cheese go really well with it Lots of love Mummy xxx

Ingredients

onion

clove garlic

tbsp olive oil

tsp ground cumin

gr spinach leaves
225
gr peas (thawed if using frozen

tbsp chopped fresh mint
900
vegetable or chicken stock
1/4
tsp grated nutmeg
lemon juice
parmesan cheese
Directions
1.
Peel and chop the onion and garlic. Heat the oil in a saucepan and add the onion, garlic and cumin and fry gently for 10 minutes until lightly golden.
2.
Wash and dry the spinach leaves and cut away the thick central stalks. Shred the leaves roughly and add to the pan with the peas, mint and stock.
3.
Bring slowly to the boil, cover and simmer over a gentle heat for 15 mins.
4.
Transfer soup to a blender or food processor and blend until very smooth. Return to the pan and heat gently until it reaches a boil. Add the nutmeg and season with salt and pepper.
5.
For the garnish blend olive oil and lemon juice. Spoon the soup into a warm bowl and drizzle over the lemon oil and Parmesan cheese,
