Yasmin's Indian Onion Chutney And Poppadoms

Ingredients
onion chutney: 2 large onions

tbsp ketchup

tbsp tomato puree

chili powder

tsp cumin
pinch salt
poppadoms: 175 g flour

tsp cumin

water
salt and pepper
Directions
1.
Onion Chutney: Cut the onions and place in a bowl of iced water. Put in the fridge for 1 hour. After an hour drain onions and tap dry with a paper towel. Mix all the ingredients with the onions and return to fridge for at least 45 minutes.

Poppadoms: Sieve the flour, cumin and salt and pepper. Add water very slowly. Mix well until dough is stiff.

Knead the dough for 5 minutes and cut it into 4 chunks.

Roll out each chunk between 2 pieces of cling film, until the dough is very very thin.
5.
Remove the top layer of cling and with a cookie cutter, cut into circles. Place on a floured surface and repeat with other pieces of dough.
6.
Once you have used all your dough you are now ready to fry them. Do this about 30 mins before you are ready to eat. Heat oil in a frying pan, stretch each circle out and place in very hot oil for 30 seconds. They will form air bubbles and once you take them out they will crisp up.
