Grandma And Grandpa's Cheese Pie

Great for a dairy lunch or light dinner!

Serves 6people
Large Cottage Cheese (24 ounces)
Package of Cream Cheese (8 ounces)
Sprinkle of flour (about 2T)
Optional: Add 1 package of frozen spinach or fresh spinach. (If too thick, add a little milk)
Package of long frozen Phyllo (or fillo) dough sheets (THAW in refrigerator overnight before using)
Melted butter: 1/2 to 1 stick (oil may be used)
Preheat oven to 400 Degrees
Combine one large cottage cheese and one large cream cheese with eggs. Mix with mixer or spoon until well blended. Add spinach, if desired. Sprinkle flour into the mixture to thicken a little and mix again.
Carefully unroll Phyllo sheets on a smooth dry surface and set desired amount on wax paper and/or cheesecloth. Microwave butter until melted. Brush each sheet with melted butter. (Keep the unused dough covered with plastic wrap and a damp towel while not using it, so it doesn't dry out.) Brush edges first to prevent cracking. Be sure to brush the last sheet with melted butter.
Put cheese mixture across the entire length in a 3" strip. Put the filling on the lower third of the sheets (closest to you) so it is easier to roll. The cheese mixture should not tough the edges. Roll up once or twice and then fold in the edges. Continue rolling to the end and gently place seam side down on an ungreased cookie sheet.
Repeat steps two and three until all the cheese mixture is used.
Bake at 400 degrees for 10 minutes.
Turn down to 350 degrees and bake for about 40 minutes or until Phyllo dough is lightly browned.
Serve warm and crispy!
