Mom's Shabbas Challah

Yields: 2 large challahs or 3 regular

Ingredients

tsp yeast
2
cups warm water
3
eggs
1/2
cup sugar
3/4
cup oil
4
tsp salt
8-9
cups flour
Directions
1.
Proof yeast and water (about 5 minutes). Feel free to add a bit of sugar (1 tsp) to get it going.
2.
In a separate bowl, mix eggs, sugar, oil, and salt.

Add yeast mixture.

Stir.
5.
Add flour and knead.
6.
Start with 8 cups and add more, by 1/4 cup if it is too sticky.
7.
If making it in a Kitchen Aid, it will come away from the sides when it has been sufficiently kneaded.
8.
Put in an oiled bowl, and let it rise until it doubles in volume (cover with a plastic bag to help it rise nicely).
9.
Punch down. Divide the dough in half.
10.
Divide each half into 6 ropes and braid.
11.
Prepare egg wash -- take egg and add water.
12.
Cover the challah with egg wash.
13.
Let it rise for about 45 minutes.
14.
Cover with egg wash again and bake at 350 for about 50 minutes.
