Dad's Seviche

Serves 6people
Ingredients
1
lb fresh, firm-fleshed fish
1
cup key lime juice
3
jalapeno peppers, seeded and diced (reserve seeds)
3
stalks celery, diced
1/3
cup cilantro, chopped
3
cloves garlic, minced
1
large tomato, seeded and chopped
1/4
cup sweet onion or green onion, chopped
jalapeno seeds (optional) crushed in a mortar with a pestle to taste (maybe a 1/2 tsp for med/mild flavor, but mix in well)
1/3
tsp coarse salt or sea salt
Hot Sauce (if you don't use the seeds)
Directions
1.
Rinse and pat dry the fish.
2.
Cut the fish into small bite-size piences varying in size from the size of one lima bean to the size of two lima beans.
3.
Cover and refrigerate
4.
Place all the ingredients into a bowl
5.
Mix ingredients and fish, let stand at least 15 minutes before serving.
6.
Adjust seasoning to taste.
