Cranbrook Bocchoy Salad

Serves 4people
Ingredients
1
bocchoy (large) or 2 small chopped -- use greens and whites
2
bunches scallions, chopped
1
box sesame seeds
1
package slivered almonds
2-3
Packages dry Chinese noodles (like Ramen noodles, but throw away flavor packet), CRUSHED
Dressing:
1/4
cup apple cider vinegar
1/3
cup white sugar
3/4
cup oil
2
tsp soy sauce
fresh grated ginger to taste
fresh garlic to taste
Directions
1.
Mix and chill bocchoy and scallions (not necessary)
2.
Toss in a pan on the stove on low heat: sesame seeds, almonds, and dry crushed Chinese noodles with a small amount of butter (or dry). Toss/heat until golden -- be careful not to burn!
3.
Dressing: combine dressing ingredients ina sauce pan and boil for one minute.
4.
Toss everything together and enjoy!
